I love sausage rolls- so much so that I’ve just googled the origin of a sausage roll! Apparently the modern sausage roll originates from 19th century France, but the practice of wrapping meat in pastry dates back to the ancient Greeks or Romans! During the 1800s the sausage roll became a popular street food in London and is now considered a classic British snack! No wonder I love them so much since they’re in every Greggs or Birds (I’m from the midlands, UK)! So I’ve decided to have a go at making my own and had to share because it was so easy! Keep reading for this yummy sausage roll recipe!
Prep time: 20 minutes Cook time: 35 minutes
What You’ll Need
- 375 grams roll-out puff pastry
- Plain flour (handful)
- 2 tablespoons apple sauce
- 400 grams sausage meat
- 1 egg
Step One: Prepare Your Pastry
If you’re feeling a bit extra you can always have a go at making your own pastry. However to keep it simple I recommend using shop-brought puff pastry.
Make sure your work surface is clean before dusting with flour and rolling out your pastry. Roll the pastry to approximately 35cm by 30cm and tidy the edges, to create a perfect rectangle.
Cut the rectangle in half lengthways and spread the apple sauce down the middle of both halves.
Step Two: Add Sausage Meat
Mix the meat in a large bowl with 2 tablespoons of water, along with any other additional flavours you might fancy. I have added thinly diced apple before, but you could consider mushrooms or other herbs.
Divide this mixture in two and spoon onto the middle of your two lengths of puff pastry. Make sure you leave a border on either side.
Step Three: Coat with Egg
I love this step- you get to paint with food.. Brush all exposed pastry and sausage meat with egg. This will give it that lovely golden colour so characteristic of a good sausage roll!
Step Four: Finish the Pastry
Fold one edge of the pastry over over the sausage meat and roll so it becomes encased. Gently press together using either your fingers or a fork.
Cut the sausage rolls into 5-10cm lengths- depending on how big you want them. Line the a baking tray with your creations and brush with the remaining egg mixture.
Step Five: Bake (Or Save)
You can either bake them immediately, save in the fridge to finish the next day or freeze them. Personally I’m hungry by this point and power on to the baking stage.
Preheat your oven to 200 degrees or 180 for fan. Bake for 35 minutes, when they should be nicely golden. If you’re cooking from frozen make sure to add an additional 10 minutes to the bake time.

I can’t wait to tuck into these! They’re a great snack, lunch accompaniment, or the ideal extra for your Christmas/Birthday party table. They honestly won’t disappoint.
